Barbajuan

Barbajuan, also spelled barbagiuan or barbagiuai, is an appetizer found mainly in the eastern French Riviera, the western part of Liguria, and Monaco, where it is especially associated with Monaco's national day on November 19. It is a fritter typically filled with Swiss chard, rice, and ricotta, along with parmigiano reggiano, onions, and leeks in a pastry of flour, eggs, and olive oil, though alternative fillings such as pumpkin, minced meat, leeks, or eggs are also used. Its name translates as uncle John in the western Ligurian and Monegasque dialects.
