Miguelitos

Breads, Flatbreads and Savory Pastries

Miguelitos are a cream-filled puff pastry dessert that originated in La Roda, in the Castilla-La Mancha region of Spain. They were created by Manuel Blanco, who was born in La Roda in 1925 and, after military service in 1960, moved to Pamplona, where he developed the pastry. The dessert takes its name from the moment Blanco gave his friend Miguel the first bite of his creation. Pastry chefs throughout La Roda de Albacete and later across Spain adopted the recipe, spreading the dessert's popularity.
