Bacalhau a Gomes de Sa is a codfish dish common in Portugal and typical of the city of Porto, created by cod merchant Jose Luis Gomes de Sa Junior, who sold the recipe to a restaurant chef. The cod is flaked and softened in milk for one to two hours, then cooked with olive oil, garlic, onion and potato, and served with black olives, parsley and boiled eggs, usually alongside red wine. It was among the finalists for the seven wonders of Portuguese gastronomy.
