Syrniki

Roasted, Grilled and Fried Dishes

Syrniki are fried Eastern Slavic pancakes made from tvorog, a soft curd cheese, mixed with flour, eggs and sugar, with optional additions such as vanilla, raisins or dried apricots. They are a staple across Belarusian, Russian, Ukrainian, Latvian and Lithuanian cooking. The name comes from the Slavic word syr, meaning soft curd cheese; Russian speakers also call the dish tvorozhniki. The soft dough is shaped into small cakes and pan-fried in oil or butter until browned on both sides while staying creamy inside. Syrniki are traditionally sweet and served for breakfast or dessert, though savory versions exist, and they are typically paired with varenye jam, smetana sour cream or melted butter.
