Enfrijoladas are a Mexican dish of corn tortillas rolled around a filling and covered in a savory bean sauce, similar in form to enchiladas but using refried beans in place of a chili sauce. They are also eaten in parts of Central America, and in Mexico are commonly served as a breakfast dish, typically topped with cheese, onions and crema, and sometimes filled with scrambled eggs or chorizo. The bean sauce is made by thinning cooked beans with their own cooking water or added water, then simmering the puree with onions and garlic fried in lard or vegetable oil. Preparation varies regionally across Mexico and Central America.
