Chicken à la King is an American dish of diced or sliced chicken in a rich cream sauce, typically made with mushrooms, pimientos and sherry. It began in the 1890s as an elegant variation on the French vol-au-vent à la Reine, served over toast points, in a pastry shell, or over rice or noodles, in prestigious restaurants. By the 1950s it had become a staple of middle-class home cooking and banquet menus in the United States, though it is now generally regarded as an old-fashioned, retro dish.
