Ostkaka

Ostkaka is a Swedish sweet dessert, sometimes called Swedish cheesecake or curd cake, with two regional forms: a smooth, halloumi-like version from Hälsingland and a grainier, lumpier version from Småland. The traditional recipe uses milk, cream, flour and rennet, often enriched with sugar, eggs, almonds, bitter almond or saffron, and the finished cake is crustless and served tepid rather than hot. It is considered one of Sweden's unofficial national dishes, served at Midsummer in Hälsingland and at Christmas in Småland, and Hälsingland hosts a world championship in ostkaka; Sweden has marked November 14 as an official Day of Ostkaka since 2004.
