Flammekueche is a savory tart from the Alsace region, made of bread dough rolled out thin into a rectangle or oval and topped with cream, fromage blanc or creme fraiche, thinly sliced onions and lardons. It comes from the Upper Rhine Valley, chiefly Alsace in France but also German-speaking parts of Moselle, Saarland, Baden and the Palatinate, where Alsatian farmers in the Kochersberg originally used it to test the temperature of their wood-fired ovens before baking bread. Its name, rendered as Flammekueche in Alsatian, Flammkuchen in German and tarte flambee in French, translates to a pie baked in the flames, even though it is actually baked in a wood-fired oven rather than flambeed.
