Bika ambon

Bika ambon is an Indonesian cake made from tapioca and sago flour, eggs, sugar, yeast and coconut milk, traditionally flavored with kaffir lime or pandan, though modern versions add banana, durian, cheese or chocolate. Yeast in the batter produces bubbles during baking that give the cake its characteristic spongy, honeycombed texture, distinguishing it from a plain Malay sponge cake. Despite its name referencing Ambon Island, the cake is actually the specialty of Medan in North Sumatra, where it is a popular gift for visitors to buy. It is baked for as long as twelve hours to extend its shelf life, though it begins to harden after about four days.
