Feta

Feta is a Greek brined white cheese made from sheep's milk or a mixture of sheep and goat's milk, soft, with small or no holes and no skin, and crumbly in texture with a tangy, salty flavor that ranges from mild to sharp. It originates from mainland Greece and the Lesbos prefecture and has held European Union Protected Designation of Origin status since 2002, which restricts the name to cheese made the traditional way in those regions from milk that is at least 70 percent sheep's milk, with up to 30 percent goat's milk allowed. It appears in Greek salads and pastries such as spanakopita and tyropita, is often served with olive oil, olives and oregano, and can be grilled or used in sandwiches and omelettes; outside the EU the name is frequently used generically for similar brined white cheeses, including cow's milk versions made in Denmark, France, Germany and the United States.
