Havarti is a semi-soft Danish cow milk cheese named after Havarthigaard, the farm of nineteenth century Danish cheesemaker Hanne Nielsen, who developed the cheese after studying cheesemaking techniques abroad. It is characterized by small, irregular holes formed during aging and a buttery, mildly tangy flavor that becomes sharper with longer aging. Havarti is produced both plain and in flavored versions incorporating ingredients such as dill or caraway.
