Biltong

Meat and Poultry Products

Biltong is a form of air-dried, cured meat that originated in Southern Africa, made from various meats ranging from beef to game meats such as ostrich or kudu. It may be cut into strips following the grain of the muscle or sliced flat across the grain, and it is related to beef jerky in that both are spiced, dried meats, though biltong is air-dried while jerky is heated to at least 71 degrees Celsius, giving the two different textures and flavors.
