Bison

Meat and Poultry Products

Bison meat is generally considered to taste similar to beef but is lower in fat and cholesterol while higher in protein, and it was the principal food source of the Indigenous peoples of the North American Plains, who used nearly every part of the animal for food, clothing, shelter and tools. The commercial bison meat industry in the United States grew slowly despite promotion by entrepreneurs such as Ted Turner from the 1990s onward, with early marketing concentrated on premium cuts like steaks and tenderloin. Canadian commercial bison farming began in the mid-1980s and expanded rapidly, from 45,235 bison on 745 farms in a 1996 census to 195,728 bison on 1,898 farms by 2006, and a kosher bison meat market also exists, with animals slaughtered at specialized facilities in the United States and Canada.
