Cheese curds are moist, coagulated pieces of curdled milk formed during the early stages of cheesemaking, eaten alone as a snack or used in prepared dishes rather than aged into a finished cheese. They are especially popular in Wisconsin and Minnesota, where they are often breaded and deep fried, and in Quebec, where they are a defining ingredient of poutine. Cheese curds are sometimes called squeaky cheese, or by the French term fromage en grain.
