Peach Palm Seed

Nuts and Seeds

The peach palm, also called pejibaye, is a spiny palm native to the Amazon basin of Colombia, Ecuador, Peru and Brazil, long cultivated across Central America for both its fruit and its edible growing shoot, heart of palm. Each fruit typically holds a single conical seed about two centimeters long, with a thin, hard shell around a white, oily kernel that tastes distinctly of coconut. The fruit itself is traditionally boiled in salted water, peeled and eaten with the seed removed, giving a texture compared to firm sweet potato and a flavor likened to hominy, dry squash or roasted chestnut; early Spanish explorers found pejibaye plantations of tens of thousands of trees already supporting Costa Rica's indigenous diet in place of corn.
