Remoulade

Condiments, Sauces and Fermented Flavorings

Remoulade is a cold sauce built on a mayonnaise base, associated with French cuisine, where it is classically flavored with mustard, capers, gherkins, herbs and sometimes anchovy and served with celeriac in the dish celeri remoulade. A distinct Louisiana Creole and Cajun version developed in the United States, typically colored and flavored with paprika, Creole mustard and hot sauce to give it a pink to red color, and is served with fried seafood such as shrimp and crawfish. The two traditions share the mayonnaise base but differ substantially in flavor and appearance.
