Marinara sauce is a simple Italian tomato-based sauce made by simmering tomatoes with garlic, onions and herbs such as oregano and basil in olive oil, typically without meat and cooked for a shorter time than slower-simmered ragus. Its name, meaning of the sea in Italian, refers to its association with Neapolitan sailors' cooking rather than to any seafood in the sauce itself, and it developed in southern Italy after tomatoes arrived from the Americas. Marinara is used as a pasta sauce, a pizza base, and a dipping sauce for fried foods such as mozzarella sticks and calamari, and forms the base from which many richer Italian American tomato sauces are built.
