Nduja, traditionally written with a leading apostrophe as 'Nduja, is a spicy, spreadable pork sausage from the Calabria region of southern Italy, made from a mix of pork fat and meat, most often including offcuts and offal, blended with a large proportion of hot Calabrian chili peppers before being stuffed into a casing and lightly smoked. Its very high fat and chili content give it a soft, almost paste like texture even after curing, unlike firmer sliceable sausages, so it is typically spread on bread or pizza, stirred into pasta sauces, or used to add heat and richness to other dishes rather than sliced and eaten on its own.
