Thermal Cooking

Modernist and Molecular Techniques

Thermal cooking uses a thermal cooker, also called a vacuum flask cooker, a heavily insulated vessel that retains heat already put into food and continues cooking it without any ongoing fuel or heat source. The device is a modern equivalent of the haybox, an older method that packed a cooking pot in hay or straw to hold in heat by the same principle.
