Ants climbing a tree is a classic dish of Sichuan cuisine in China, made of ground meat, typically pork, served over bean thread noodles. The name comes from its appearance, with bits of ground meat clinging to the noodles evoking ants walking on twigs. The meat is briefly marinated while the noodles soak to soften, then scallions, garlic and ginger are cooked briefly in hot oil before the marinated meat is added, followed by the softened noodles, which absorb the seasoning of rice vinegar, soy sauce, sesame oil and chili paste; some versions fry the noodles first so they puff before being added back to the dish.
