Naengmyeon, also spelled raengmyon, is a noodle dish of North Korean origin made of long, thin, handmade noodles most commonly produced from buckwheat, though potato, sweet potato, arrowroot, and kudzu starches are also used. Other varieties are made with ingredients such as seaweed and green tea.
