Taro dumpling is a variety of dim sum in Chinese cuisine, also called taro croquette or deep fried taro dumpling puff, served as a standard item in dim sum restaurants in Hong Kong and internationally and sold in Chinese bakeries in overseas Chinatowns. It is made with an outer shell of boiled and mashed taro filled with seasoned ground pork, then deep fried until the taro layer turns crisp, light and fluffy.
