Babka

Breads, Flatbreads and Savory Pastries

Babka is a sweet braided cake or viennoiserie that originated in the Jewish communities of Poland and Western Ukraine. It is prepared from a yeast-leavened dough that is rolled out, spread with a filling, then rolled up and braided before baking. Traditional fillings included jam or nuts, though chocolate, cinnamon, fruit, or cheese are now also used, and the dough can be made with butter or, to remain pareve, with olive oil.
