Fugazza

Breads, Flatbreads and Savory Pastries

Fugazza is an Argentine flatbread from Buenos Aires, related to Italian focaccia and named from the Genoese word fugassa. It is a thick crusted dough topped mainly with onions, sometimes with olives, and a common variant called fugazza con queso adds a layer of mozzarella cheese. It was created between 1893 and 1932 by Juan Banchero at his family bakery in the La Boca neighborhood of Buenos Aires.
