Savory spinach pie is a Greek-origin pastry now eaten across Greece, Bosnia and Herzegovina, and Turkey. Its filling combines chopped spinach, sometimes with chard, with feta or another white cheese and egg, often seasoned with onions or scallions and herbs such as dill, mint or parsley. The filling is wrapped or layered in phyllo pastry brushed with butter or olive oil, either baked in a large pan and cut into servings or rolled into individual triangles, and baked until the phyllo turns golden; it can be served hot or at room temperature. The Greek version is called spanakopita, the Bosnian version zeljanica, and the Turkish versions Ispanakli Selanik Boregi or Ispanakli Bosnak Boregi. A vegan version made with olive oil instead of dairy is prepared for religious fasting periods.
