Bryndzové halušky, known in Austrian German as Brimsennocken, is one of the national dishes of Slovakia. The dish consists of halušky, small potato dumplings, and bryndza, a sheep's milk cheese, optionally sprinkled with cooked bits of smoked pork fat or bacon and chives or spring onions.
