Spaghetti alla carrettiera

Noodle and Dumpling Dishes

Spaghetti alla carrettiera is a pasta dish that originated in the Platani Valley and is now more common in eastern Sicily, combining spaghetti with garlic, chili pepper, pecorino siciliano or breadcrumbs, parsley and olive oil, with tomato commonly added and anchovies, capers, almonds, pine nuts or white wine used in some variations. Tradition holds that cart drivers prepared the dish in advance and carried it on their wagons to eat for lunch.
