Moussaka is a layered dish built around eggplant or potatoes, ground meat, tomatoes and spices, eaten across Greece, the Balkans and the eastern Mediterranean, with the word itself descended from the Arabic musaqqaa by way of Ottoman Turkish. Similar layered eggplant and meat dishes appear as early as a thirteenth century Arabic cookbook by the Baghdad-born writer al-Baghdadi, and versions of the dish were cooked across the former Ottoman lands long before its most famous modern form existed. The moussaka now closely associated with Greece, topped with a baked bechamel sauce, was created in the 1920s by the French-trained Greek chef Nikolaos Tselementes, who reworked older layered eggplant dishes into the three-layer version served today. Because the dish's name, ingredients and technique moved between Arabic, Ottoman Turkish, Greek and other Balkan kitchens over centuries, its origin is genuinely shared across the region rather than belonging to any one country alone.
