Panipuri, also known as phuchka or golgappa, is a snack of the Indian subcontinent consisting of a deep fried, hollow, spherical puri shell filled with a mixture that commonly includes potatoes, chickpeas and spices, and dipped in flavored water called pani, typically a spicy coriander or mint chutney and a sweet tamarind chutney. It is a small, one bite finger food and one of the most common street foods across the Indian subcontinent, with local variations such as Delhi style golgappe, Kolkata style phuchka and Mumbai style panipuri using different fillings and waters; its exact origin is unknown.
