Lokshen, also called itriyot, locshen, or lockshen, is the common name for a range of Ashkenazi Jewish egg noodles used across many Jewish dishes, including chicken soup, kugel, kasha varnishkes, and lokshen mit kaese, and served alongside dishes such as brisket, sweet and sour meatballs, and apricot chicken. They may also be served simply with melted butter or a plain tomato sauce. In the United States, lokshen are also used as the basis for casseroles and baked dishes, including tuna noodle casserole and both sweet and savory lokshen kugels.
