Youmian, meaning thin noodles, is a variety of Chinese noodle widely used in the cuisines of southern China, especially Hong Kong and Guangdong, and also found in dishes from Shanghai, Malaysia, Singapore, and overseas Chinese communities. The noodles are generally made with eggs, and a notable variety called cyun daan min, or whole egg noodles in Cantonese, is found chiefly in East and Southeast Asian regions with sizable Chinese populations. Depending on the cuisine, the noodles may be boiled in broth or stir-fried in a wok.
