Blown sugar is a confectionery sugar-art technique that starts from a portion of pulled sugar, placed on a rubber pump fitted with a wood or metal tip. As the pump inflates the sugar much like a balloon, the confectioner shapes the expanding mass by hand, often into forms such as animals or flowers. The piece is cooled with a fan and rotated constantly while it hardens, so it keeps its shape rather than sagging before it sets.
