Pulled sugar is a confectionery sugar-art technique in which cooked, liquid sugar is poured onto a silicone rubber mat to cool. Coloring can be added, and the confectioner then folds the cooling sugar over on itself repeatedly until it becomes workable. The folding works air into the sugar, giving it a lustrous, satin-like sheen, and once pliable it can be hand shaped into decorative forms used in sugar sculpture showpieces.
