The straight dough method, also called the direct dough method, mixes bread in a single step: every ingredient, all of it fresh rather than pre-fermented, is combined and kneaded together in one session. After mixing, the dough rests through a bulk fermentation of about an hour or longer before it is divided, in contrast to methods that first ferment a separate portion of the dough as a pre-ferment.
