Amandine (Garnish)

Amandine is a culinary term for a garnish of almonds, most often whole or flaked almonds toasted and sprinkled over a dish that has been cooked in butter and seasoned. The spelling almondine is also common, particularly in American cookbooks. The garnish is used most often with green beans, fish such as trout, and asparagus, giving each dish a toasted, buttery topping and a contrasting crunch.
