Browning is the process, and the culinary technique of inducing it, by which food turns brown as a result of chemical reactions taking place within it. It is one of the chemical reactions studied in food chemistry, of interest for its effects on health, nutrition and food technology, and it falls into two main categories, enzymatic and non-enzymatic browning processes.
