Al Dente

Preparation and Flavor Development Techniques

In cooking, pasta or risotto described as al dente is cooked to be firm to the bite, meaning it requires a relatively brief cooking time. The term is also applied to firmly cooked vegetables, and in contemporary Italian cooking al dente is considered the ideal texture for pasta.
