Reconstitution is the process of rehydrating dried foods by placing them in water or another liquid to bring them back to a resemblance of their original size, shape and texture. The technique allows preserved, dried foods to be restored for use in cooking; dried mushrooms, for example, are commonly reconstituted by soaking in hot water for twenty to thirty minutes, and the resulting soaking liquid can then be used as a flavorful broth in soups and sauces.
