Curdling is the breaking of an emulsion or colloid into larger parts of differing composition through the physio-chemical processes of flocculation, creaming and coalescence. It is used deliberately as a technique in the production of cheese curd and tofu, though the same process is undesirable when it occurs unintentionally in a sauce, a cheese fondue or a custard.
