Washing Meat

Preparation and Flavor Development Techniques

Washing meat, also called cleaning meat, is a technique of preparation used to treat raw meat or poultry before cooking in order to sanitize it. Methods include rinsing under running water or with a strainer, or soaking the meat in saltwater, vinegar, lemon juice or other acidic solutions, which may also enhance flavor when the meat is cooked.
