Armenian cuisine reflects the culinary traditions of the Armenian people as shaped by the history and geography of Armenian populated regions and the succession of empires that ruled them, relying on techniques such as stuffing, frothing and pureeing and drawing flavor chiefly from the quality of ingredients rather than heavy spicing, with fresh herbs used throughout. Lamb is the fundamental meat and yogurt appears across the cuisine, cracked wheat is favored over maize and rice among grains, and chickpeas, lentils, white beans and kidney beans are prominent legumes, while eggplant is a basic vegetable and walnuts, almonds, pine nuts, hazelnuts and pistachios provide texture throughout savory and sweet dishes. Apricots, whose scientific name Prunus armeniaca derives from Armenia, hold particular significance, and both fresh and dried fruit serve as main ingredients or souring agents. Lavash bread, dolma, stuffed vegetables, khorovats, grilled meat, and yogurt based preparations define the table, and desserts frequently draw on honey, nuts and rose water, giving the cuisine a distinctive identity within the broader Caucasian and Middle Eastern culinary world.
