Qurutob is a dish of Tajik cuisine, sometimes described as a bread salad, and considered one of the national dishes of Tajikistan. Dried cheese balls called qurut are soaked in water to make a salty liquid base, over which strips of a flatbread called fatir are placed; the dish is served on large plates garnished with vegetables such as onion, cucumber and tomato or herbs, with meat or chili peppers sometimes added, and is meant to be shared and eaten by hand.
