Salade Nicoise

Salade Nicoise is a salad that originated in the French city of Nice, traditionally made of tomatoes, hard-boiled eggs, Nicoise olives, and anchovies or tuna, dressed with olive oil or a vinaigrette. It can be served as a composed salad with distinct sections or as a tossed salad, and for decades traditionalists and innovators have disagreed over which ingredients belong in it, with traditionalists excluding cooked vegetables while other versions add raw or cooked green beans, potatoes, red peppers, shallots, or artichoke hearts. It has been popular worldwide since the early twentieth century and has been praised by chefs including Delia Smith and Gordon Ramsay.
