Potato Salad

Salads

Potato salad is a dish made from boiled potatoes combined with a dressing and other ingredients such as boiled eggs and raw vegetables, typically served as a cold or room-temperature side dish. It emerged in Europe after potatoes were introduced there in the 16th century, as cooks began combining the tuber with vinegar, mustard and onion; the oldest known recipe appears in a 1621 work by an Austrian abbot, and the dish subsequently spread through Europe, North America and Asia. Regional variants differ widely: American potato salad typically uses a mayonnaise based dressing, French versions favor olive oil and vinegar, Japanese potetosarada is dressed with rice vinegar and karashi mustard, the Russian Olivier salad adds pickled cucumbers and peas, and Czech households traditionally serve their own version at Christmas.
