Cartouche (Cooking)

Moist-Heat and Combination Cooking Methods

A cartouche is a piece of parchment paper cut into a disk and used to cover food during cooking. The paper traps steam above the food while allowing some to escape out the sides and through a center vent, moderating evaporation and helping the food cook evenly.
