Cassia, also known as Chinese cinnamon, is the dried inner bark of Cinnamomum cassia, a tree native to southern China, and is the form of cinnamon most commonly sold in North America under the plain name cinnamon. It has a stronger, more pungent flavor than true or Ceylon cinnamon (Cinnamomum verum), and comes as thicker, harder quills or ground powder, with a higher coumarin content than true cinnamon. Cassia is a major commercial spice crop in China, Indonesia and Vietnam, and dominates the global cinnamon supply by volume.
