Chives

Spices, Herbs and Seasonings

Chives, Allium schoenoprasum, are a perennial, bulb-forming flowering plant in the family Amaryllidaceae, the only Allium species native to both the Old World and the New World, growing to about 25 centimeters with hollow, tubular, grass-like leaves and star-shaped pale purple flowers borne in clusters of 10 to 30. They grow naturally across temperate Europe, Asia and North America, ranging in Asia from the Ural Mountains to Kamchatka and in North America across parts of Canada and scattered regions of the United States. Both the leaves and flowers are eaten for their mild, onion-like flavor, milder than most other Alliums, and the plant is also used to repel insects, making it valued for companion planting alongside vegetables and ornamentals.
