Five-Spice Powder

Spices, Herbs and Seasonings

Five-spice powder is a spice blend used in Chinese cuisine, traditionally combining star anise, cloves, Chinese cinnamon (cassia), Sichuan pepper and fennel seed, ground into a fine reddish-brown powder. The blend is designed to represent the five basic flavors of Chinese culinary philosophy: sweet, sour, bitter, salty and umami. It is used widely in braising, roasting and marinating, notably in Chinese roast duck, red-braised pork and char siu, and variations of the blend exist in other Southeast Asian cuisines with different spice ratios.
