Romazava is the national dish of Madagascar, a stew of greens, zebu beef, tomatoes and onions usually served with rice. A key ingredient is the herb brèdes mafana, called anamalaho in Malagasy, which contains the acid amide spilanthol and gives the dish a tingling, mouth-numbing quality that induces saliva production.
