Kesra is a traditional Algerian flatbread made from semolina, usually cooked on a flat tajine griddle over high heat. It can be eaten hot or cold, plain or spread with butter, jam or honey, stuffed, dipped in olive oil, or served alongside tajine, cheese or fermented milk. Depending on the region it is also known as khobz el ftir in Algiers, aɣrum n tajin in Kabylia, and arekhsas or arekhsis in the Aurès region.
